Summary: AH! Real food again!
Comments: I'm a mom of two kids with food allergies. Milk, Egg, and Nuts really only scratch the surface, but finding recipes for tasty meals without even these three is difficult. This cookbook has definitely been worth the money I paid for it! There are some recipes that I won't be able to try due to the other allergies we are managing, but of the several that I have tried so far (and more planned!), ALL have been huge successes..including the two dishes I prepared for dinner tonight! Not only do the finished products taste, smell, and look wonderful, but most of the recipes require very little time in the kitchen. Since my children are both toddlers, this is a much welcomed bonus! My kids are the typical picky-eaters, as well, and they've begged for seconds and thirds of most everything I've cooked using this book. I find myself cooking out of this cookbook more and more. Every recipe I've tried has fueled my excitement about trying others found in this cookbook. I HIGHLY recommended this book for everyone, but especially those managing milk, egg, or nut allergies!

Summary: A Culinary Breakthrough - Pure Genius!
Comments: The recipes in this book are nothing short of miraculous! I have been using The Uncheese Cookbook for years and am probably due for a new copy, as my book is well worn with many dog-eared pages. The recipes aren't cheese, so don't expect them to be. They are Uncheeses. Still, they have an incredibly cheese-like flavor and texture. In fact, several of them come so amazingly close to "the real thing" that even some of my dairy-eating friends have been fooled.
What is particularly impressive is that the ingredients are wholesome, natural, REAL foods--not the highly-refined starches and other questionable items used in many of the commercial soy cheeses (which, in my opinion, taste like plastic). Furthermore, these recipes taste GOOD and are surprisingly easy to make. Here are some of my favorites: Gee Whiz Spread (awesome!), Colby Cheese, Gouda Cheese, Boursin, Hot Parmesan Artichoke Dip, Philly Potato Chowder, Curried Cauliflower Cheese Soup, Unprocessed Cheese Sauce (heavenly!), Fondue (every kind under the sun!), Stuffed Shells, Grilled Cheese, Cheesecakes (yum, yum!), and so much more.
Not only are the recipes imaginative, delicious, and rich tasting, they are remarkably low in fat (there's a nutritional analysis with each recipe). Many other cookbook authors and recipe developers have tried to imitate Ms. Stepaniak's uncheeses, but no one could surpass her original creations. She's a true pioneer.
If you miss cheese or just want something cheesy but healthful, be sure to pick up a copy of this classic gem!

Summary: This is NOT a cookbook for vegans!
Comments: I am very disappointed in this book. As a vegan who does not use ANY animal products (milk, butter, eggs, meat, fish, poultry, etc.), I was lured by the idea of a "dairy-free" dessert cookbook. When I received it and looked through it, I was astounded to note that almost every recipe calls for eggs! There is a note in the front of the book that EggBeaters may be substituted, but since they are animal-based, I don't use them - ever. This was a waste of my money.

Summary: great if you love milk, but someone you love can't have it
Comments: my boyfriend of 2 years is lactose intolerant, and I love milk, cheese, creamy soups, butter, basically everything he CAN'T eat. as we've become more health/money conscious, and I've been cooking at home almost every night, this became a dilemma.
enter Jane Zukin's book. it's a lactose - intolerance reference guide and a bunch of great recipes in one. the section on hidden sources of lactose and careful label reading was particularly enlightening (who would have thought plain pre-processed bread crumbs had lactose ingredients?), as was the section on fast foods. now I'll be a lot more comfortable eating at Burger King with him. the substitution suggestions are also helpful, and conveniently located in an easy to use table.
but the main thing I love about this book are the recipes! so far they have all been clearly explained, easy to make, and delicious. I love the fact that nutritional information is included with each one (be aware that her portion sizes were a lot smaller then mine, but I DO cook for 3 college boys on a regular basis).
as an example - her vegetable linguine. my boyfriend begs me to add meat when I tell him I'm making it for dinner, so I give in and add shrimp to it. when we sit down to dinner, after all 8 servings are devoured, he says, that was great, and it really didn't need meat at all. first time he's EVER indicated a recipe would be better WITHOUT meat! that alone would put it on my list of things to serve often, even it weren't one of the most fabulous tasting recipes I've ever found.
the only criticism I have is that so many of the recipes rely on "milk - substitute", "soy-cheese-substitute" or "milk-free-margarine". but it does keep me thinking about it as I prepare a complete meal.
definitely buy this if you or someone you love is lactose intolerant. it will become one of your most frequently used resources and recipe books.

Comments: My mother is allergic to wheat and so am I, so this book is a godsend to us, as it means we can now eat sandwiches. However I live in Ireland so I found it difficult to get used to "cups" rather than pounds and ounces, but once I learnt one cup is 8 fluid ounces, I discovered it is actually an easier and more accurate measurement of ingredients than using weighing scales. I actually want to advise anybody from Ireland reading this - guar and Xanthan gum (essential for gluten-free bread recipes) is very difficult to purchase in Ireland and I had to purchase from Oregon, USA. The postage cost more than the products, and delivery took 10 weeks...

Comments: I bought this book hoping to find new ideas on dairy-free cooking. While the recipes are dairy free about 95% of them call for tofu. I've read a lot on nutrition and am also concerned about going over board on soy consumption, especially for women. This book would be great for a vegan but if you're just looking for dairy-free then I would recommend 'Totally Dairy-Free Cooking' by Louis Lanza.

Summary: More Than Just A Cookbook
Comments: The author is so clearly an expert in her field for the way she explains and clarifies her information. She helps you understand the ingredients in the recipes and the need for whole wheat pastry flour, natural sweeteners instead of refined sugar, dairy and its alternatives. I try to live dairy free and have used her information when explaining to friends my lifestyle. The recipes are fabulous. The Apple Crisp was a hit at Thanksgiving dinner. No one knew there wasn't sugar, eggs, and bleached flour in the dessert they raved about! Should be on the bookshelves of bakers who care about there family's health but want to create great desserts.

Comments: I am allergic to wheat and choose a vegan diet. I purchased this book due to the summary and fabulous reviews only to find that the title of this book is completely inaccurate. It is NOT dairy free, but instead it is lactose free. Most of the recipes call for at least 4 eggs and often they're separated, which makes it difficult to use egg replacer. The use of nuts is an excellent alternative to flour and I feel that this book is suited to persons with a wheat allergy. However, this book is not suited for those that choose to live dairy free.

Summary: Glad to learn the facts on Diary Allergies
Comments: I would like to acknowledge Denise Jardine for her precise information about being allergic to dairy products and what to look for when reading ingredient labels. It is amazing how many store products have diary additives; all the way from vegetable and meat entrees to mayonnaise and pancake mixes. My fiance no longer has digestive problems and in part just purchasing a loaf of bread that is dairy free was a big help. Her recipes are easy to follow and I taste great. Denise brings old recipes [with wonderful flavors] to the table with new ingredients. Thank you Denise!

Comments: This book is not for vegetarians! It does contain recipes that call for meat, fish, and chicken. This book was written primarily for those who are lactose intolerant or allergic to milk protein (two separate allergies.) It contains helpful sections on how to shop for foods, reading ingredient listings to find "hidden" dairy additives, and how to request that your food be cooked properly in restaurants to avoid allergic reactions. The section on which processed foods are "safe" and which are not is rather outdated and no longer useful. Some of the foods she has listed as "safe" are not safe now, as manufacturers often change formulas and rarely make this known. I'd prefer to just see the list of additives that may contain dairy or dairy derivatives and maybe some examples of package listings showing how to look for these ingredients. The recipe section is creatively done - too many allergy cookbooks rely heavily on substitutions that result in the finished food having a strange texture or flavor. These recipes contain "real" foods. There aren't many better books out there for those with dairy allergies.

The tofu cheesecake and veggie burgers are amazing!The medical information at the beginning of the book was very helpful. Summary: the better of two
Comments: Jane Zukin's _Dairy-Free Cookbook_ has some of the same drawbacks as _The Milk-Free Kitchen_ (although I had best say now that I have the 1989 version and there is a newer version in print, which I have not seen). Many, though not all, of the main-dish recipes call for meat (though of course vegetarian bouillon can be substituted for beef or chicken broth); the product information, though much *more* thorough than that in _T. M.-F. C._, is still limited and somewhat dated. But altogether I like it much better.
Preceding the recipes is a section on the different types and symptoms of milk allergy, on the importance of supplements, and help with shopping and dining out. The information is thorough and understandable. The recipes range from the appealing to the *weird* (I, for one, don't wish to bake bologna in pie crust as an appetizer...), but there are enough recipes and a wide enough range that everyone should find something appealing. The recipes feed four, six, usually eight, or occasionally ten or twelve persons, which is a plus for me because our family appreciates leftovers for lunches. However, this might pose a problem if one were cooking for only two or three. Again, soy products are used minimally.
I will add that I intend to buy the new edition of this book.

Summary: Great Vegan Nutritional Info and Recipes
Comments: I really enjoyed the nutrition section at the beginning of this book. I've been a vegan for a long time, so I've got to be impressed when a cookbook teaches me some new things about vegan nutrition.
The recipes are great as well - as is expected for Joanne Stepaniak's work. My small complaint is that some of the recipes are identical to those in the Uncheese Cookbook. Yeah, that Gazebo cheesecake is excellent enough to deserve getting printed again, but I was really hoping for some new cheesecake recipes! Quite a few of the recipes are new, so it is still worth picking up this one as well, especially if you've got picky non-vegans to feed.

Summary: Healthy recipes, without gluten and other allergens
Comments: This book has recipes for frozen desserts, main courses, soups and sauces, and many other items. Most are vegetarian or vegan, and they're quite tasty. But I'll focus on the baked goods, since they're the hardest to get right (in my experience).
Unlike the recipes in many popular gluten-free cookbooks (which contain lots of sugar, white flours and shortening), the baked goods in this book are made from whole grains (or non-grain flours, like quinoa or cassava) and a small amount of unrefined sweeteners and oils. The recipes are marked as to which common allergens they don't contain; most are free of wheat, gluten, dairy, eggs, and corn. There are also variations for many of the recipes, so you can adapt them to your preferences. "101 Cookies' is a great example of this. The author gives a basic cookie recipe, then lists possible substitutions for almost every ingredient - so this recipe can give you "101" (more or less!) different types of cookies.
I've tried many of the recipes, and they've turned out well, although sometimes they needed a little fine-tuning (more or less liquid, shorter baking time, etc.). So I wouldn't recommend this book to a very inexperienced cook, or anyone who wants to recreate the taste of Wonderbread or Pepperidge Farms. But if you're willing to improvise, and you're looking for an alternative to recipes or commercial mixes with highly processed ingredients, this book is very useful.

Comments: I do not cook milk free at my home, but have relatives that cannot tolerate milk (of any kind) in their diet. This book has common sense information and ideas that are extremely helpful for creating meals without milk (even a Thanksgiving dinner). The format of the book is easy to use and sprinkled with ideas and tips. A good basic cookbook for anyone as the recipes can be adapted for use with milk also.

Comments: Although I did find that there are a few recipes which do contain ingredients that are supposedly not in this cookbook, I found the recipes interesting and tasty. If you ensure you use light buckwheat flour as recommended in applicable recipes and follow other hints provided by the author, I've found the recipes to be very good overall. This is a very good basic cookbook for people, like myself, who are just starting to discover the world of allergy free cooking/eating.

Summary: Safe, Healthy Alternative to Dairy, Especially for Children!
Comments: This is an excellent book not only for children with allergies, but for everyone looking for healthy alternatives... Almonds are hypoallergenic naturally and almond milk is perfectly safe - better yet when organic almonds are used. Peanuts (a bean, really, and not a nut at all) are one of the highest allergens in young children. Peanuts are also not the best choice for nut milks. Almonds contain proteins, fats, carbohydrates, calcium, potassium, and magnesium - they are the BEST choice for nut milks. Other "good" nuts are cashews, pecans, pine nuts, walnuts, pumpkinseeds, sesame seeds (may be a tad strong for the wee ones) and sunflower seeds. This book has 40 wonderful recipes. I have the first edition of this book (1990) for it's been a trusted friend for over 10 years and I have tested each and every recipe myself and they truly are wonderful... I HIGHLY recommend it. The best part is that it really gets you inspired and after tasting the delicious elixir, and knowing all of the benefits, you will NEVER buy boxes soy, rice or almond milk again. It's really a lovely book...
