Comments: This is a cookbook rarity in that every recipe in here is delicious. I got this book when I was starting out trying to add soy to my diet for better health. I only knew about tofu and I wasn't very creative with it either. This book showed me how to make delicious, healthy versions of foods I really love like Potatoes au Gratin, Soy Milk Pancakes, Soy Cheese Corn Bread, Pizzas and Focaccia, Cream of Asparagus Soup, chowders, chilis, desserts, stews, Kung Pao Tempeh, Tofu Lasagne, manicotti,Cajun dishes and even Tiramisu, just to name a few. This book teaches how to use all the different soy products with easy to follow recipes that will give your menu fresh delights based on foods you already know and love. Each recipe has complete nutritional information. There are addresses and phone numbers for soy product sources and places to write for detailed soy information of a general nature. The author's information about the various soy products is a very understandable and helpful introduction to this often overlooked and misunderstood group of foods. Her personal notes about each recipe help make the dishes seem like they came from a trusted friend's kitchen. The best way to make a change in your diet is to make the change as subtle as you can so that your old habits will not be so tempting. These recipes will make you glad you added soy to your diet and your body and the environment will thank you.

Comments: This is an excellent book for vegetarians interested in the Zone, as well as those who simply want to increase their soy intake. The recipes are clear and easy to follow; over half are totally vegan or can be easily modified to be so, and about four or five contain fish. The rest are ovo-lacto vegetarian. Since soy protein has not been shown to decrease calcium in bone, it is an excellent way to increase protein in the diet. In addition, this is a diet high in fiber, low in calories, and very easy to live with, once you get used to counting "protein blocks."
For an author whose previous books are so heavy in animal protein, this book is a delight for those of us who don't wish to partake in chicken, fish, or beef. He is very careful to steer clear of "hidden" animal products, such as chicken broth and gelatin. Finally, the author explains his theories very clearly. I highly recommend this book.

Comments: While I'm sure that hard-core vegetarians and other food purists will complain about this book, which contains a few recipes containing eggs, dairy products, as well as meat and fish, this is a superb book for anyone wishing to learn more about soy foods. This book is especially useful for cooks, like me, who eat meat, but who are interested in exploring ways to add economical and nutritious soy foods to their families' diets. With careful descriptions and explanations of a broad range of soy foods, from miso to tofu to tempeh and everything in between, this book offers recipes for many meals and occasions, using easy-to-understand and easy-to-follow instructions. Substitutions are often suggested, and most of the recipes can be created from ingredients readily obtainable in most supermarkets. The recipes are both imaginative and tasty. I'd recommend this book wholeheartedly to anyone who loves to cook and is interested in alternative sources of protein.

Comments: Soy of Cooking, by Marie Oser Reviewed by Mimi Clark, "Veggie Gourmet" Soy of Cooking, by Marie Oser, is for all intents and purposes, a textbook in my vegetarian cooking classes. In addition to the wide variety of delectable soy recipes, it is also an excellent reference book; a primer not JUST for the tofu-impaired, but also for health-conscious individuals who recognize the importance of incorporating soyfoods into their daily diet in an effort to protect against disease. Ms. Oser's creative use of tofu, tempeh, TVP, miso and soymilk satisfies even the most sophisticated palate. And her section on desserts proves that one needn't feel deprived when egg and dairy products are omitted from recipes. This point was originally illustrated in her first book, Luscious Low Fat Desserts. Ms. Oser was one of the first authors to successfully replace butter/margarine with tofu. A perfect example of this concept is illustrated in "Marie's Incredible Chocolate Brownies," on page 233 of Soy of Cooking; my students' favorite!

Comments: There has been a lot of negative press in the media about soy, even though research has shown positive effects in the prevention of certain health problems, including heart attack, stroke, various cancers, osteoporosis, menopausal symptoms, diabetes, and kidney disease. This book starts with the culinary history of soy and covers in detail all the health benefits listed above, leaving the reader with little doubt about the health promoting properties of "this glorious bean." In addition to the impressive list of health benefits, she includes a question and answer section about soy. Chef Monique Gilbert gives the enthusiastic cook myriad reasons for using soy and recipes incorporating soy in its various forms into meals. Virtues of Soy makes a good start for the cook trying to switch to a non-meat diet, though some of the recipes do contain eggs. There are recipe chapters for Breakfast Items; Breads, Pizzas, Burgers and Patties; Dips, Spreads, Dressings and Vinaigrettes; Salads, Sandwiches and Wraps; Chili and Soups; Stir Fry, Saute, Pasta and Baked Entrees; Side Dishes, Gravies and Sauces; and Desserts, Snacks and Drinks-169 "kitchen-tested" recipes in all! We tried the Spinach Lasagne, which was quite delicious (though we didn't use the recipe for homemade noodles). Our child testers enjoyed the Walnut Raisin Cinnamon Swirls and super easy Banana Sorbet. Comments: Soy Smart Health is the best book on soy I've seen so far. Solomon et al have explored areas of soy health benefits I haven't ever considered. Their research is complete and current, with citations as recent as March 2000. This book is definitely one of the best purchases I've made this year. All of my friends have one now.

Comments: Should you add soy products to your diet? If so, how much and in what form? Stephen Holt, M.D. answers these questions, and many more, in The Soy Revolution: The Food of the Next Millennium. Dr. Holt says that adverse lifestyle choices are the basis for many chronic diseases. Good nutrition is a major factor in lifestyle and health and he says that "soy foods are not only good sources of nutrition, they can prevent diseases and, in some cases, fractions of soy can treat diseases." The purpose of his book is help "sort through the facts about soy and guide you to the best ways to use this unique food in order to build and maintain health."
Dr. Holt has written and lectured extensively in the field of natural health. He provides a brief history of soybeans, which were first grown 4,000 years ago in China. He then describes the nutritional qualities of soybeans, explaining that they are one of the few plants to "provide a complete protein source," which makes then a good meat substitute. Remaining chapters discuss the specific role of soy products in diseases such as heart disease, diabetes, and cancer. Soy products are also useful in keeping the prostate, kidneys, and urinary tract healthy, and are of benefit to women undergoing menopause. One chapter is devoted to the special needs of athletes, and another covers the needs of children. Dr. Holt quotes a variety of scientific studies as evidence of the safety and benefits of soy products. He says that "over several centuries, soy has shown itself to be one of the most important, healthful and safe foods on our planet." He provides lists of resources and information for those wishing to do their own research. Readers wishing to achieve freedom from chronic diseases will find The Soy Revolution an excellent reference.

Comments: "More Soy Cooking" is chock full of information and gourmet recipes for vegetarians and vegans, and those who just want a more healthy diet. I found the listings of calcium content and protein content in plant foods extremely helpful. The cooking tips, and cooking tools sections were also informative. I like how the information is presented with complete explanations and definitions of items that may be unfamiliar to a novice vegetarian. And that's just the introduction. The recipes are incredible. Every one I have tried is full of taste (which is a little unexpected in a soy cook book), and the presentation lends itself to any table, anywhere. I thought "The Soy of Cooking" was really good and have used it extensively. I didn't think it could get any better--but "More Soy Cooking" has continued the tradition of excellent information and healthy, tasty recipes. I whole heartedly recommend this book.

Comments: Lorna Sass continues to delight her fans. The New Soy Cookbook is chock full of deliciously unexpected uses for a variety of soy products. Of particular interest are the seafood recipes. The Shrimps, Mussels and Tofu in Lemongrass-Miso Broth recipe is outstanding. Ms. Sass has definitely taken a whole new look at soy. The entire format of the book is bold, exciting and most inviting.
