Summary: Mouth-Watering Recipes
Comments: "Low fat" and "low cholesterol" don't have to mean low flavor! These recipes have a great variety. Most of the recipes are very easy to follow, use basic ingredients and don't require hours of preparation. Granted there are a few recipes, as in any cookbook, that are a bit extravagant, but those are great for entertaining company and still sticking to your diet. As an example of the simplicity: Mushroom and Mozzarella Risotto (Prep=10 min, Cook=35 min), Country Turkey Stroganoff (Prep=10 min, Cook=15 min), and Chicken and Cornbread Stuffing Casserole (Prep=15, Cook=15).
Great tasting recipes, great variety, easy to make!

Summary: excellent authentic recipes with nutritional information
Comments: As an indian I can tell you, these recipes are as close as you can get to authentic indian while staying low fat.
I must admit this cookbook sat on my shelf for a long time because I loved Mathu Jaffrey's time consuming and complexly spiced recipes if I was going to use a cookbook. The cooking we have always done at home used a lot of specialty ingredients and took a lot of time, it seemed to me that simple low fat indian couldn't be any good. BUT I WAS WRONG! The recipes in this book are EXCELLENT. Very close to authentic while using ingredients you can find almost anywhere and VERY HEALTHY. Imagine that! The recipes in this book are low-fat, low cholesterol and low sodium while being very flavorful and fresh tasting. The nutritional label at the end each recipe is very complete also. For example, for beef samosa's,she has 2 different ways of cooking them, fried or baked. Then she includes 2 nutrient analysis for each way of cooking it. VERY NICE! Also each nutrient analysis has a breakdown for sodium with salt included and sodium content without AND a saturated fat versus total fat breakdown.

The last 40 pages have info on :
- indian spices and their usages and flavor
- American, British, Australian, and Metric conversion
- oven temperature conversion : F versus Celsius
- explanation of proteins, fats, carbs, and sodium
- table of desirable weights for men and women
- differences in cholesterol
- and a nutritional breakdown table of "common" foods although it includes items like lentils, bulgar and veal.

The only minus is that this book has diagrams (for somosa wrapping etc.) but no color pictures. :(

Overall I'd say this is a wonderful book for people interested in fitness or dieting and exotic foods! Not a single item in this book is swimming in fat, like most indian cookbooks are.I would buy this book for cooking for myself daily and a Muthu Jaffrey's (high fat) cookbooks for cooking for special occasions and guests.
Definitely buy this book, it lives up to it name! Another good cookbook low fat cookbook I would recommend is "Easy Exotic : A Model's Low-Fat Recipes from Around the World" mostly indian, some asian. Very good too!

Comments: I started using this book for my husband. He as a combination of bad genetics and scant will-power. The dishes are very easy to make, most of the ingredients are already in your kitchen, and best of all, they are delicious. It is very easy to follow and you can't believe you are eating so healthy because it tastes so good.

Summary: Well-rounded and practical cookbook
Comments: I really appreciated finding this informative and practical cookbook that helped me change our family's eating habits after my husband was diagnosed with cardiomyopathy. It is crucial that he be on a low-sodium diet and it was very difficult to find a cookbook that provided both low-sodium and low-fat/cholesterol. The recipes are easy to follow and make. The ingredients can easily be found at the local grocery store. I especially liked the section at the beginning of the book explaining the various spices and how to complement the flavors of your food. I also appreciated the listing of brand names that have low-sodium products. Not all recipes are winners, but it gives you a solid range that you can draw from when you try to maintain a feeling that you are eating "normal" food, not a bland diet. Overall a very good cookbook that has become an integral part of my daily food preparation.
