Moosewood Restaurant Low-Fat Favorites: Flavorful Recipes for Healthful Meals ASIN: 0517884941
Customer's Rating: 5 Summary: Everything a Cookbook Should Be!
Comments: I *highly* recommend Moosewood Restaurant Low-Fat Favorites; it is everything a cookbook should be. The authors provide down-to-earth instructions and thorough explanations. Nearly all ingredients are easily found at any major grocery store and the recipes result in flavor-packed, satisfying meals. Each well-organized recipe comes with an estimated preparation time, estimated cooking time, complete nutritional profile (including both fiber and fat count), and a recommendation from the authors for what other recipes in the book would complement a given dish. Indexes list the lowest fat recipes in the book, the quickest recipes in the book, etc. Although most of the dishes focus on vegetarian fare, omnivores (such as myself) should not shy away from this fabulous resource. An entire chapter is devoted to fish, and chicken breasts or other low-fat meat can always be incorporated into other recipes. The book is also packed with a wealth of low-fat cooking tips that any chef will find helpful for everyday, healthy, flavorful cooking.

Betty Crocker's Low-Fat, Low-Cholesterol Cooking Today ASIN: 0028637623
Customer's Rating: 5 Summary: Mouth-Watering Recipes
Comments: "Low fat" and "low cholesterol" don't have to mean low flavor! These recipes have a great variety. Most of the recipes are very easy to follow, use basic ingredients and don't require hours of preparation. Granted there are a few recipes, as in any cookbook, that are a bit extravagant, but those are great for entertaining company and still sticking to your diet. As an example of the simplicity: Mushroom and Mozzarella Risotto (Prep=10 min, Cook=35 min), Country Turkey Stroganoff (Prep=10 min, Cook=15 min), and Chicken and Cornbread Stuffing Casserole (Prep=15, Cook=15). Great tasting recipes, great variety, easy to make!
